If you dont have a jail broken iPhone the easiest way to do this, would be to plug an audio cable into the iPhone headset and the other side into the line in of your computer. Then record as you play into your favorite audio recording program. This is an old school way of recording mp3s off players. Though make sure you have an adapter for the mini audio cable as the iPhone gen1 and 3g have non standard jack types.
